Ingredients

Instructions

  1. Preheat the oven to 180°C (350°F). Grease a 9-inch springform pan with butter and dust it evenly with flour.
  2. Melt the butter in a frying pan over medium-high heat, swirling often, until it browns and smells nutty. Pour it into a heatproof bowl without scraping the pan.
  3. Stir the cinnamon into the browned butter and set aside.
  4. Return the still-hot pan to medium-high heat. Add the apples, 1 tablespoon of the sugar and the salt. Cook, stirring now and then, until the apples have released their juice and start to brown.
  5. Add the rhum and cook until it evaporates (or flambé it).
  6. Take the pan off the heat and let the apples cool while you make the batter.
  7. In a small bowl, whisk the flour and baking powder together.
  8. In a large bowl, whisk the browned butter with the eggs, vanilla and remaining sugar.
  9. Stir the flour mixture into the egg mixture until smooth, then fold in the cooled apples.
  10. Pour the batter into the prepared pan and bake for 55 to 60 minutes, until deep brown.
  11. Cool completely in the pan on a wire rack, then unmold and chill in the fridge before serving.
