Ingredientes
- Butter125 ml
- Cinnamon5 ml
- Apple · sliced4
- Sugar175 ml
- Salt2 ml
- Brandy30 ml
- Flour150 ml
- Baking powder5 ml
- Egg2
- Vanilla10 ml
Modo de preparo
- Preheat the oven to 180°C (350°F). Grease a 9-inch springform pan with butter and dust it evenly with flour.
- Melt the butter in a frying pan over medium-high heat, swirling often, until it browns and smells nutty. Pour it into a heatproof bowl without scraping the pan.
- Stir the cinnamon into the browned butter and set aside.
- Return the still-hot pan to medium-high heat. Add the apples, 1 tablespoon of the sugar and the salt. Cook, stirring now and then, until the apples have released their juice and start to brown.
- Add the rhum and cook until it evaporates (or flambé it).
- Take the pan off the heat and let the apples cool while you make the batter.
- In a small bowl, whisk the flour and baking powder together.
- In a large bowl, whisk the browned butter with the eggs, vanilla and remaining sugar.
- Stir the flour mixture into the egg mixture until smooth, then fold in the cooled apples.
- Pour the batter into the prepared pan and bake for 55 to 60 minutes, until deep brown.
- Cool completely in the pan on a wire rack, then unmold and chill in the fridge before serving.
