  1. Put the quartered apples, cinnamon sticks, ginger, star anise, water and cloves in a large stockpot and stir. Bring to a boil over high heat, about 15 minutes.
  2. Lower the heat to low and simmer uncovered for 2 to 2½ hours, until the apples are pulpy and the cider has reduced by half and turned rich golden brown.
  3. While simmering, stir every 15 to 20 minutes and press the apples gently with a wooden spoon or potato masher to break them down.
  4. Set a fine-mesh strainer or cheesecloth-lined colander over a large heatproof bowl. In batches, ladle the hot cider through, pressing the solids to extract liquid. Discard the solids.
  5. Return the strained cider to the pot. Stir in the brown sugar and orange extract and simmer over low heat, stirring occasionally, for about 5 minutes until the sugar dissolves.
  6. Ladle into mugs and serve steaming hot, garnished with cinnamon sticks or orange slices if desired.
  7. To store, cool to room temperature (about 30 minutes), transfer to jars or pitchers, and refrigerate up to 5 days or freeze up to 3 months. Reheat gently on the stovetop before serving.
