The Secret To Flavorful Apple Cider
Ingredientes
- Apple · quartered12
- Cinnamon stick3
- Ginger · sliced2 pedaços
- Star anise2
- Clove2 colheres de chá
- Salt½ colher de chá
- Brown sugar1 xícara
- Orange · for garnish1 colher de sopa
Modo de preparo
- Put the quartered apples, cinnamon sticks, ginger, star anise, water and cloves in a large stockpot and stir. Bring to a boil over high heat, about 15 minutes.
- Lower the heat to low and simmer uncovered for 2 to 2½ hours, until the apples are pulpy and the cider has reduced by half and turned rich golden brown.
- While simmering, stir every 15 to 20 minutes and press the apples gently with a wooden spoon or potato masher to break them down.
- Set a fine-mesh strainer or cheesecloth-lined colander over a large heatproof bowl. In batches, ladle the hot cider through, pressing the solids to extract liquid. Discard the solids.
- Return the strained cider to the pot. Stir in the brown sugar and orange extract and simmer over low heat, stirring occasionally, for about 5 minutes until the sugar dissolves.
- Ladle into mugs and serve steaming hot, garnished with cinnamon sticks or orange slices if desired.
- To store, cool to room temperature (about 30 minutes), transfer to jars or pitchers, and refrigerate up to 5 days or freeze up to 3 months. Reheat gently on the stovetop before serving.
