The Secret to Perfect Crispy Calamari
Ingredients
- Squid1 lb
- Milk1 cup
- Flour1 cup
- Cornstarch2 tbsp
- Smoked paprika1 tsp
- Black pepper½ tsp
- Oregano1 tsp
- Vegetable oil
- Salt
Instructions
- Make sure frozen calamari is fully thawed and drain off any excess liquid.
- Soak the calamari rings in milk, making sure they are fully covered, in the fridge for 30 minutes.
- Mix the flour and cornstarch with the smoked paprika, black pepper and oregano on a plate.
- Coat each ring thoroughly in the flour mixture and set aside on a plate.
- Heat oil in a small saucepan filled 3 to 4 inches deep over medium-high heat until it reaches 350°F. Check with a thermometer, or drop in a ring: it is ready when it bubbles and floats.
- Fry a few coated rings at a time for 3 to 5 minutes until golden brown.
- Move the fried calamari to a cooling rack, season with salt, then fry the rest. Serve immediately.
