🤤 The STICKIEST Fried Rice Ever. (Lo Mai Fan 糯米飯)!
Ingredients
- Sausage1 oz
- Pork belly2 oz
- Shiitake mushroom · dried1 oz
- Dried shrimp1 oz
- Scallion2 oz
- Cilantro2 oz
- Rice24 oz
- Garlic2 cloves
- Oil3 tbsp
- Dark soy sauce2 tsp
- Salt1 tsp
- Soy sauce1 tsp
Instructions
- Rinse the jasmine rice and glutinous rice together, changing the water three times, then drain them in a colander.
- Wash the dried shrimp, drain, and soak them in warm water until soft. Do the same with the dried shiitake, covering the bowl with a plate to keep the heat in. After 10 to 15 minutes, slice the shiitake thinly and dice it small.
- Cut the cured pork belly into strips, then dice it small, about the same size as the mushroom pieces. Dice the Chinese sausage the same way. Mince the garlic finely. Chop the cilantro and green onion finely and set aside for garnish.
- Put boiling water in the rice cooker, then add the salt and dark soy sauce and stir to mix. Stir in the rinsed rice and cook it.
- Heat a wok or pan on high and add the oil. Add the garlic and stir-fry for 10 seconds, then add the dried shrimp and stir-fry 10 seconds more.
- Add the sausage and pork belly and cook about 30 seconds, then add the mushrooms and cook 1 minute more. Add the light soy sauce and dark soy sauce, cook 40 to 50 seconds, then transfer everything to a plate.
- Stir the cooked rice so the seasoning mixes in, then stir in oil. Heat more oil in the wok, add the rice and stir-fry about 1.5 minutes until very fragrant. Taste and adjust; if needed, add 1 tbsp light soy sauce and cook 30 seconds more.
- Lower the heat, return the stir-fried ingredients to the wok (keeping 1 to 2 tbsp aside for topping) and mix with chopsticks for 2.5 minutes. Add the chopped cilantro and green onion, mix, and turn off the heat.
- Transfer the rice to a serving dish, top with the reserved ingredients and garnish, and serve.
