Instructions

  1. Soak the broccoli in clean water for 10 to 15 minutes, then rinse and drain.
  2. Cut the broccoli into florets and thin-slice the peeled stems.
  3. Cut the chicken into thin slices and marinate with the cornstarch, water, salt, oyster sauce and white pepper.
  4. Prepare the garlic, ginger, green onion whites and carrot as described (minced, triangles, 1-inch pieces, thin slices).
  5. Mix the sauce: oyster sauce, light soy sauce, salt, sugar, cooking wine and white pepper; separately mix cornstarch and water.
  6. Bring 8 cups of water to a rolling boil, add 1 tsp salt and 2 tsp oil, then blanch the broccoli for 4 to 5 minutes until the water bubbles again.
  7. Soak the broccoli in ice water for 1 minute, then drain.
  8. Heat the wok on high until smoking, add 2 tbsp oil, then lower the heat and brown the chicken for about 30 seconds per side, stir-frying about 2 minutes until cooked. Remove.
  9. Stir-fry garlic, ginger, green onion whites and carrot for 30 to 40 seconds until fragrant, then return the heat to high.
  10. Add the broccoli and a splash of cooking wine; stir-fry 1.5 to 2 minutes.
  11. Return the chicken and stir-fry 30 seconds.
  12. Pour the sauce into the centre of the wok and stir-fry 15 to 20 seconds. Taste and adjust seasoning.
  13. Add the cornstarch slurry gradually while stirring, for about 30 seconds, until thickened to your liking.
  14. Add a splash of sesame oil, stir, turn off the heat and serve.
