The Turkish Comfort Stew You Need This Week
Ingredients
- White bean · dried1 ½ cups
- Olive oil3 tbsp
- Onion1
- Beef1 lb
- Tomato paste2 tbsp
- Pepper paste2 tbsp
- Pul biber1 tsp
- Black pepper¼ tsp
- Salt1 tsp
Instructions
- Put the white beans in a large bowl, cover with cold water and soak overnight, or at least 6 to 8 hours.
- Heat the olive oil in a large pot over medium heat. Sauté the onion until golden, about 5 minutes. Add the beef and brown it for a few minutes until a caramelized crust forms.
- Stir in the tomato paste and pepper paste until fully combined. Add the pul biber, black pepper and salt and cook them together.
- Drain the beans, add them to the pot with the beef and onion, and stir for a few minutes so they absorb the flavours.
- Add 4 to 6 cups of water to cover everything completely. Bring to a simmer, cover, and cook on low for about 1 hour, until the beans and beef are tender.
- Serve hot.
