Ingredients

Instructions

  1. Whisk the flour, cocoa powder, baking powder, baking soda and salt together in a large bowl. Set aside.
  2. Mix the milk and vinegar in a jug and leave for about 5 minutes.
  3. Whisk the sugar, eggs, milk mixture and oil together in a medium bowl.
  4. Make 1 1/2 cups of strong hot coffee.
  5. Add the hot coffee to the dry ingredients, then add the wet mixture and whisk until smooth. The batter will be very thin; make sure no flour remains at the bottom of the bowl.
  6. Pour the batter into two or three lined and greased 8-inch (20 cm) cake pans. Bake at 180°C / 350°F for about 30 minutes for three cakes or 40 minutes for two cakes, until a cake tester comes out clean.
  7. Cool the cakes in the pans for 15 minutes, then move them to a wire rack to cool completely.
  8. Beat the room-temperature butter on medium speed for 2-3 minutes, until light, fluffy and almost doubled in volume.
  9. Add the cream cheese and beat for another minute.
  10. Add the powdered sugar and cocoa powder on low speed until combined; the mixture will be clumpy at first.
  11. With the mixer running slowly, add 1-2 tablespoons of milk, a little at a time, until the frosting thins to the right consistency.
  12. Scrape down the bowl, add the vanilla, and beat for another 1-2 minutes until light and fluffy.
  13. Level the first cake layer if needed, then spread about 3/4 cup of frosting over it. Top with a second layer and repeat.
  14. Place the final layer upside down, then spread frosting over the top and sides.
  15. Refrigerate the cake for at least 30 minutes to set before slicing.
