The Ultimate French Onion Soup Burger
Ingredients
- Milk⅔ cups
- Gruyère cheese · shredded⅔ cups
- Parmesan cheese · grated¼ cups
- Cheddar cheese½ cups
- Onion · thinly sliced, for garnish1 cup + 2 tsp + 2 + 1 ½ tsp
- Ground beef9 oz
- Mustardas needed
- Swiss cheese3 slices
- Thyme · for garnish
- Burger bun
Instructions
- Slice the onions into 1/8-inch rounds, season with kosher salt, and set aside to draw out moisture.
- Warm the milk over medium heat until steaming. Whisk in the Gruyère and Parmesan until smooth, then add the white cheddar and French onion dip and whisk until silky. Stir in 2 teaspoons of French onion dip seasoning, then reduce to low and keep warm.
- Divide the beef into three 3-ounce balls without overworking it.
- Preheat a large cast-iron skillet over high heat to 500°F (260°C).
- Drizzle mustard on each beef ball, place them mustard-side down on the skillet, and smash each into a thin patty. Sprinkle 1 teaspoon of the seasoning over the patties and top each with onion slices. Cook undisturbed about 2 minutes, until the edges are deeply browned and crisp.
- Flip and smash the patties again. Sprinkle the remaining ½ teaspoon of seasoning on them and top each with a slice of Swiss cheese. Steam the top bun on one patty and the bottom bun on another, cooking about 2 minutes until the cheese melts and the onions brown.
- Stack the bottom bun, then the first patty cheese-side up, the second cheese-side up, and the third with the top bun.
- Place a 3-inch ring mold on the bun, pour in about ¼ cup of warm cheese sauce, then lift the mold straight up so the sauce runs down the burger.
- Top with crispy fried onions and fresh thyme leaves, and serve immediately with the remaining sauce for dipping.
