- Pour in the wine and stir for about 2 minutes until nearly evaporated. Add the marinara, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon thyme, 1/2 teaspoon sugar and 2 tablespoons parsley. Bring to a simmer, then cover and cook for 5 minutes.
- In a large bowl, mix the cottage cheese, ricotta, 1 cup of the mozzarella, the egg and 2 tablespoons parsley until well combined.
- Preheat the oven to 375°F. Boil the noodles in salted water until al dente, drain, then rinse with cold water.
- Spread 1/2 cup of meat sauce in the bottom of a deep 9x13 dish. Layer 3 noodles, spread on one third of the meat sauce, and sprinkle with 1 cup mozzarella. Spread half the cheese mixture over the top. Repeat until you have 3 layers of noodles.
- Poke 9-12 toothpicks into the surface, cover with foil and bake at 375°F for 45 minutes.
- Remove the foil and broil for 3-5 minutes, until the cheese is golden. Rest for 30 minutes before slicing.
