The Viral Dot Cakes | Easy Homemade Recipe
Ingredients
- Flour1 ¼ cups
- Baking powder1 tsp
- Baking soda¼ tsp
- Salt¼ tsp
- Butter0.58 cups
- Vegetable oil¼ cups
- Sugar½ cups + 2 tbsp + ⅔ cups
- Egg2
- Buttermilk½ cups
- Vanilla2 ½ tsp
- Cream cheese1 cup
- Heavy cream¼ cups
- Sprinkles
Instructions
- Preheat the oven to 350°F (175°C). Grease 4 ramekins (about 8 oz / 225 ml each) and set them on a baking tray.
- In a medium bowl, whisk together the flour, baking powder, baking soda and salt.
- In a large bowl, beat the butter and sugar for 2 to 3 minutes until light and fluffy.
- Beat in the eggs one at a time, mixing well after each, then beat in the oil and vanilla.
- Add the dry ingredients and buttermilk in alternating additions, starting and ending with the flour. Mix just until smooth; do not overmix.
- Divide the batter among the ramekins, filling each about two-thirds to three-quarters full.
- Bake for 25 to 30 minutes, until lightly golden and a toothpick inserted in the centre comes out clean.
- Cool the cakes completely in the ramekins.
- Optional: if the cakes domed, loosen the edges with a knife, remove them, trim the tops flat, and return them to the ramekins.
- For the frosting, beat the butter and powdered sugar until light and creamy. Add the cream cheese and vanilla and beat until smooth and fluffy. If needed, add heavy cream 2 tablespoons at a time until the desired consistency.
- Spread or pipe the frosting generously over each cake, smooth the tops, then cover with sprinkles, pressing lightly.
- Refrigerate for at least 1 to 2 hours before serving.
