  1. Preheat the oven to 350°F (175°C). Grease 4 ramekins (about 8 oz / 225 ml each) and set them on a baking tray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda and salt.
  3. In a large bowl, beat the butter and sugar for 2 to 3 minutes until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each, then beat in the oil and vanilla.
  5. Add the dry ingredients and buttermilk in alternating additions, starting and ending with the flour. Mix just until smooth; do not overmix.
  6. Divide the batter among the ramekins, filling each about two-thirds to three-quarters full.
  7. Bake for 25 to 30 minutes, until lightly golden and a toothpick inserted in the centre comes out clean.
  8. Cool the cakes completely in the ramekins.
  9. Optional: if the cakes domed, loosen the edges with a knife, remove them, trim the tops flat, and return them to the ramekins.
  10. For the frosting, beat the butter and powdered sugar until light and creamy. Add the cream cheese and vanilla and beat until smooth and fluffy. If needed, add heavy cream 2 tablespoons at a time until the desired consistency.
  11. Spread or pipe the frosting generously over each cake, smooth the tops, then cover with sprinkles, pressing lightly.
  12. Refrigerate for at least 1 to 2 hours before serving.
