By Vincenzo's Plate · 20 min

Ingredients

Instructions

  1. Cut the cherry tomatoes in half and put them in a large bowl.
  2. Gently press the tomatoes with a potato masher to release their juice.
  3. Tear the basil leaves into small pieces and add them to the bowl.
  4. Add a generous amount of salt and pepper and stir well.
  5. Add a tablespoon of coarse salt to boiling water and cook the pasta according to the package instructions, stirring once to keep it from sticking.
  6. Drain the pasta, let it cool, and drizzle with extra virgin olive oil so it doesn't stick together.
  7. Cut the buffalo mozzarella and pecorino into bite-sized cubes. Add half to the tomato mixture and stir until the tomatoes, juices and cheese combine.
  8. Add the pasta to the bowl and mix quickly so it absorbs the juices.
  9. Stir in the remaining cheese and top with basil. Serve.
