Ingredients
- Cooking spray
- Butter1 lb
- Chocolate4
- Sugar1 ½ cups
- Flour½ cups
- Baking powder1 tsp
- Egg6
- Vanilla1 tbsp
- Salt · for topping¼ tsp
- Walnut · crushed chopped12 oz
- Apricot1 cup
- Gelatin · powder1 tsp
Instructions
- Preheat the oven to 300°F (150°C). Grease a 9 x 12-inch rimmed baking sheet with cooking spray or butter and set aside.
- Fill a medium saucepan with 1–2 inches of water and bring to a gentle simmer over medium-low heat. Set a dry heatproof bowl on top, not touching the water. Melt the butter and chocolate in the bowl, stirring often and scraping the sides, until smooth, about 5 minutes. Remove from heat and let cool slightly, 5–10 minutes.
- In a large bowl, whisk together the sugar, flour and baking powder. Add the melted chocolate and stir well for 4–5 minutes. Stir in the eggs, vanilla and salt.
- Pour the batter onto the prepared sheet and scatter the walnuts over the top, pressing them lightly into the batter.
- Bake until the edges crisp, the brownies rise about ¼ inch, and a toothpick inserted in the center comes out clean, 35–40 minutes. Cool on the sheet for 30 minutes.
- For the glaze, combine the water, apricot preserves and gelatin in a saucepan. Bring to a boil over high heat without stirring, then cook, stirring occasionally, until thickened, about 2 minutes. Take off the heat.
- Brush a thin layer of glaze over the cooled brownies, sprinkle with flaky sea salt if using, and serve.
