Ingredients
- Strawberry5 cups
- Almond · roasted2 cups
- Date · pitted1 ½ cups
- Agave nectar1 tbsp
- Lemon1 tsp
- Salt0.13 tsp
- Basil
Instructions
- Make the crust: in a food processor, blend 1 cup of dates, the nuts and the salt on high, scraping down the sides as needed, until the mixture sticks together. If it is too crumbly, add a few more dates.
- Set aside about ½ cup of the crust mixture. Press the rest into a 9-inch pie pan, up the sides as well, and refrigerate.
- Reserve 1 cup of the strawberries. Thinly slice the remaining 4 cups.
- In a food processor, blend the reserved 1 cup of strawberries, ½ cup of dates, the agave syrup and the lemon juice on high until smooth.
- Take the crust out of the fridge and slowly arrange the sliced strawberries inside it.
- Gently spread the smooth strawberry mixture over the slices until they are fully covered.
- Press the reserved ½ cup of crust mixture around the rim of the pan to form a border, pressing gently as you go.
- Decorate with a few strawberries and mint or basil, then refrigerate for at least one hour before serving.
