- Extra firm tofu10 oz
- Vegan cream cheese3 oz
- Extra virgin olive oil1 tbsp
- Salt½ tsp
- Garlic powder1 tsp
- Onion powder½ tsp
- Nutritional yeast2 tbsp
- Black pepper½ tsp
- Italian seasoning1 tsp
- Basil · dried1 tsp
- Sun dried tomato · chopped2 tbsp
- Mozzarella cheese¾ cups
- Parmesan cheese¼ cups
- Zucchini2–3
- Pasta sauce14 oz
- Pepper flakes¼ tsp
- Balsamic vinegar2 tsp
- Veggie grounds¾ cups
- Chili flake · crushed flakes
Instructions
- For the filling, crumble the tofu into a medium bowl, add the vegan cream cheese and olive oil, and mash with a fork until fairly smooth. Mix in all the spices, herbs and sun-dried tomato.
- Stir in the vegan cheeses and mix again until evenly combined.
- Slice the zucchini thinly with a vegetable peeler. Trim any thick edges so the rolls are a similar width.
- Spread the pasta sauce in an 8 x 11 inch baking dish, mix in the remaining sauce ingredients and level it out.
- Spread filling onto one or two zucchini strips, leaving at least 1 inch free at both ends. Roll them up and place snugly in the sauce.
- Repeat until the dish is full, keeping the rolls close together with a few millimetres between each.
- Bake covered for 25 minutes at 400°F (205°C).
- Sprinkle vegan cheese over the top, cover with parchment, and bake another 10 to 15 minutes.
- Remove the parchment and bake 5 minutes more to brown the cheese, or broil 2 to 3 minutes.
- Let cool 5 to 10 minutes, then garnish with fresh herbs and pepper flakes if you like.
