- Sugar1 cup
- Egg3
- Dark chocolate⅓ cups
- Vegetable oil⅓ cups
- Food coloring2 tsp
- Vinegar1 tsp
- Vanilla1 ½ tsp
- Flour¾ cups
- Cocoa powder¼ cups
- Cornstarch½ tbsp
- Salt½ tsp
- White chocolate¼ cups
Instructions
- Preheat the oven to 160°C / 325°F (conventional). Line a 18 x 18 cm (7 x 7 inch) square pan with parchment paper.
- Melt the dark chocolate and let it cool slightly while you prepare the other ingredients.
- Sift the flour, cocoa powder, cornstarch and salt together in a bowl.
- In a large bowl, beat the eggs and sugar with an electric hand mixer for 2 minutes, until light and fluffy.
- Mix in the melted chocolate, vegetable oil, white vinegar, red gel colouring and vanilla until combined.
- Add the dry ingredients to the batter and mix on medium speed until combined. Scrape down the bowl sides with a spatula so everything is incorporated.
- Pour the batter into the pan and smooth it level. Drizzle the melted white chocolate over the top and swirl it with a knife into wave patterns.
- Bake until done, then cool in the pan on a rack. When fully cool, lift out the brownie, place it on a serving dish and cut into 9 to 12 squares.
