Instructions
- Thinly slice the green onions, keeping whites and greens separate. Finely chop the garlic. Thinly slice the chili peppers if using.
- Mix all the seasoning paste ingredients in a small container.
- Bring 8 cups of water to a boil in a pot. Carefully lower in fridge-cold eggs, then gently stir a few times with a ladle to centre the yolks.
- Boil the eggs gently for 7 minutes, then move them to an ice water bath to cool. Peel and set aside.
- Heat the oil in a large pan over medium-high heat. Add the ground beef and sear for 1 minute until the bottom is browned. Flip, break up the beef and cook 1–2 minutes until no longer pink.
- Add the white parts of the green onions and the garlic and stir-fry for 1 minute until fragrant.
- Lower the heat to low, add the seasoning paste and sauté for 2 minutes without burning it. If worried, add a splash of water or sauté off the heat.
- Pour in 2 cups of water, stir and bring to a boil. Reduce to medium-high, add the eggs and simmer in the sauce for 7 minutes.
- Turn off the heat. Stir in the remaining green onions, chili peppers if using, sesame oil and sesame seeds.
- Serve each egg over hot steamed rice, spooned with extra sauce from the pan and a little sesame oil.
