Ingredientes

Modo de preparo

  1. Thinly slice the green onions, keeping whites and greens separate. Finely chop the garlic. Thinly slice the chili peppers if using.
  2. Mix all the seasoning paste ingredients in a small container.
  3. Bring 8 cups of water to a boil in a pot. Carefully lower in fridge-cold eggs, then gently stir a few times with a ladle to centre the yolks.
  4. Boil the eggs gently for 7 minutes, then move them to an ice water bath to cool. Peel and set aside.
  5. Heat the oil in a large pan over medium-high heat. Add the ground beef and sear for 1 minute until the bottom is browned. Flip, break up the beef and cook 1–2 minutes until no longer pink.
  6. Add the white parts of the green onions and the garlic and stir-fry for 1 minute until fragrant.
  7. Lower the heat to low, add the seasoning paste and sauté for 2 minutes without burning it. If worried, add a splash of water or sauté off the heat.
  8. Pour in 2 cups of water, stir and bring to a boil. Reduce to medium-high, add the eggs and simmer in the sauce for 7 minutes.
  9. Turn off the heat. Stir in the remaining green onions, chili peppers if using, sesame oil and sesame seeds.
  10. Serve each egg over hot steamed rice, spooned with extra sauce from the pan and a little sesame oil.
