Modo de preparo
- Cut the beef into bite-sized pieces, slicing against the grain at an angle. Put it in a bowl with the soy sauce, Shaoxing wine, white pepper, cornstarch, baking soda and oil, massage gently, then cover and refrigerate for 10 minutes.
- Finely chop the garlic, grate about 2 teaspoons of ginger, slice the green onions with whites and greens separated, dice the red bell pepper (about 1/2 cup), trim the asparagus and cut it into 2-inch (5 cm) pieces.
- Mix all the sauce ingredients in a small container and set aside.
- Heat 1 tablespoon of oil in a large wok over high heat. Spread the marinated beef in a single layer and sear for 1 minute until the bottom is golden, then flip and cook the other side for 1 to 2 minutes. Remove and set aside; the beef does not need to be fully cooked.
- In the same wok over high heat, add 2 tablespoons of oil, then the garlic, ginger and white parts of the green onions. Stir-fry for 1 minute until fragrant.
- Add the asparagus and stir-fry for 1 minute until coated in the oil.
- Return the beef to the wok with the bell pepper. Stir the sauce, pour it in and toss for 1 to 2 minutes, until thickened and everything is coated.
- Turn off the heat, stir in the sesame oil, transfer to a plate, garnish with the green onion greens.
