Preparación
- Cut the chicken into bite-sized pieces, add the marinade ingredients and massage gently. Cover and refrigerate for 10 minutes.
- Thinly slice the white parts of the green onions and cut the green parts into 5 cm pieces. Finely chop the garlic, grate the ginger, and cut the onion and bell peppers into bite-sized pieces.
- Mix all the sauce ingredients in a small bowl and set aside.
- Heat 2 tablespoons of oil in a large wok over high heat. Spread the chicken in a single layer and sear 1 to 2 minutes until the bottom is golden brown. Flip and stir-fry 3 minutes, until fully cooked. Remove and set aside.
- In the same wok, heat 1 tablespoon of oil over high heat. Add the onion, spread it out and let it sit 1 minute until slightly charred.
- Add the white green-onion parts, garlic and ginger and stir-fry 30 seconds until fragrant.
- Add the bell peppers and stir-fry 1 to 2 minutes until tender-crisp. Return the chicken to the wok with the sauce and stir-fry 1 minute until evenly coated.
- Turn off the heat. Add the green onion greens, sesame oil and black pepper and mix well. Add up to 1 teaspoon more black pepper if you like more heat. Serve with hot rice.
