Modo de preparo
- Scrape the ginger skin, grate about 1 tablespoon, and mix it with the soy sauce, mirin, sake, sugar and water to make the sauce.
- Cut the onion into 1/4-inch slices. Thinly slice the cabbage, soak it in cold water for 1 to 2 minutes, then drain.
- Make a few slashes around the edge of each pork slice, season both sides with black pepper, and add a little salt if the slices are thick.
- Lightly coat the pork with potato starch.
- Heat 1 tablespoon oil in a large pan over medium-high heat. Add the onion with a pinch of salt and cook 3 to 4 minutes until softened and browned. Set aside.
- Heat 1 tablespoon oil in the same pan over medium-high heat. Cook the pork in two batches in a single layer, 1 to 2 minutes per side, until no longer pink.
- Return all the pork and onion to the pan on medium heat. Add the sauce and simmer 2 to 3 minutes, turning the pork occasionally, until thickened and coated.
- Serve the pork over shredded cabbage with steamed rice, and spoon over the sauce from the pan.
