Ingredients

Instructions

  1. Cut the chicken breasts in half lengthwise, then into bite-sized pieces. Put them in a bowl, add all the marinade ingredients (egg white is not listed; use the soy sauce, Shaoxing wine, white pepper, cornstarch, baking soda, 1 tablespoon oil listed in the marinade) and massage well. Cover and refrigerate for 10 minutes.
  2. Finely chop the garlic, grate about 2 teaspoons of ginger, thinly slice the green onions with whites and greens separated, and thinly slice the carrot if using. Cut the broccoli into bite-sized florets.
  3. Mix the sauce ingredients in a small container: soy sauce, oyster sauce, dark soy sauce if using, sugar, Shaoxing wine, chicken bouillon powder, water and cornstarch. Mix well and set aside.
  4. Bring a pot of water to a boil with a pinch of salt. Blanch the broccoli for 1 minute, then transfer to ice-cold water to keep it green. Drain well and set aside.
  5. Heat 1 tablespoon oil in a large wok over high heat. Add the marinated chicken, spread it out and sear 1 minute until browned on the bottom. Flip and cook the other side 3 to 4 minutes until cooked through. Remove and set aside.
  6. In the same wok, add 2 tablespoons oil and reduce to medium. Add the garlic, ginger and white parts of the green onions and sauté 1 minute until fragrant.
  7. Increase to medium-high, add the broccoli and carrot and stir-fry 1 minute until coated in the oil.
  8. Turn to high, return the chicken and stir-fry 1 minute. Stir the sauce, add it to the wok and toss 1 to 2 minutes until thickened.
  9. Turn off the heat, stir in the sesame oil and green onion greens, and serve with hot rice.
