  1. Whisk the flour, sugar and salt together in a large bowl. Cut in the cold butter cubes with a pastry blender until the mix is crumbly with pea-sized bits of butter.
  2. Drizzle in 5 tablespoons ice water and stir with a fork until shaggy. If the dough crumbles when pinched, add more ice water 1 teaspoon at a time. Press gently into a disk without kneading, wrap, and chill at least 1 hour.
  3. Heat the oven to 400°F. Roll the dough on floured parchment into a 12–13 inch circle, move it with the parchment to a rimmed baking sheet, and chill while you prepare the apples.
  4. Slice the apples into 1/8-inch slices (peeling is optional). Mix the sugar, cinnamon and salt. Arrange the apples in overlapping rows over the dough, leaving a 2-inch border, and sprinkle with the cinnamon sugar.
  5. Fold the border up over the apples, pleating as you go. Dot the apples with the diced butter, brush the crust with beaten egg, and sprinkle with coarse sugar.
  6. Bake at 400°F for 35–40 minutes, until the crust is deep golden and the apples are tender with lightly caramelized edges. Cool on the baking sheet for 15 minutes before slicing.
