This Ceviche Is So Fresh #shorts
Ingredients
- Shrimp1 lb
- Lime1 cup
- Cucumber1
- Avocado2
- Tomato3
- Red onion1
- Cilantro¼ bunches
- Jalapeño chili1
- Clamato juice½ cups
- Tostadas16
- Hot sauce
Instructions
- Rinse the thawed shrimp under cold running water, then squeeze or pat them very dry with paper towels so the cocktail is not watery.
- Dice the shrimp if they are large and put them in a large glass or other non-reactive bowl. Squeeze 1 to 1 1/4 cups lime juice from 6 limes over the shrimp, stir, cover and refrigerate. Marinate raw shrimp 1 1/2 to 2 hours, until no longer translucent, or cooked shrimp 15 minutes, stirring halfway through.
- Chop the cucumber, avocado, tomatoes, red onion, jalapeno and cilantro. A food chopper speeds this up.
- When the shrimp are done, add the vegetables and the Clamato juice to the bowl and stir. Drizzle with hot sauce if you like, then serve with tortilla chips or over tostadas.
