Ingredients

Instructions

  1. Put the minced beef in a mixing bowl with the ground sage, paprika, cumin, dried oregano, salt and pepper, and stir to combine.
  2. Put the deseeded, roughly chopped guajillo and ancho chilies in a saucepan with the beef broth. Bring to a boil over medium-high heat, then remove from the heat. Blend the broth and chilies until smooth and set aside.
  3. Heat a large pan over medium-high heat, spray with cooking oil, add the beef and cook until browned, breaking it up with a spoon.
  4. Add the diced bell peppers, chopped onion and grated garlic and cook for about 3 minutes, until the onion and peppers start to soften.
  5. Add the stout, bay leaf, cinnamon stick and long green chili and cook for 1 minute to reduce the beer.
  6. Add the blended chili broth, crushed tomatoes, drained beans and chipotle in adobo. Stir to combine.
  7. Add a small square of dark chocolate and the lime juice and stir until the chocolate has melted and is fully mixed in.
  8. Reduce to a gentle simmer and cook until the sauce is no longer too runny and coats everything well. Adjust the salt and pepper if needed and set aside.
  9. For the cheese sauce, put the cheddar slices and milk in a saucepan over low heat and stir often until melted and smooth. Set aside.
  10. To assemble, open a hot dog bun in the middle, place 1 slice of crispy bacon inside, then add 1 warm sausage.
  11. Spoon about 2-3 tbsp of chili over the sausage, drizzle with cheese sauce, then top with chopped red onion and coriander.
