- Scallion2
- Sesame oil10 ml
Instructions
- Season the pork belly slices with salt and pepper. Heat a pan over medium-high heat with a little neutral oil until shimmering.
- Lay the slices flat and sear for 3–4 minutes without moving them, until golden and the fat starts to render. Flip and cook the other side for 3–4 minutes. If the slices are thick, sear the edges for 20–30 seconds each.
- In a small pan, combine the soy sauce, honey, rice vinegar, chilli paste, garlic and ginger. Simmer for 2–3 minutes until slightly thickened and glossy.
- Spoon the glaze into the pan with the pork. Turn the slices to coat them, letting the glaze bubble and cling for 30–60 seconds.
- Remove from the heat and rest for 2 minutes so the glaze sets.
- Toss the cabbages, carrot and spring onions with the sesame oil, rice vinegar and soy sauce, and season with salt and pepper.
- Arrange the pork neatly on a plate, serve with the slaw, and drizzle any leftover glaze over the pork.
