This Ground Beef Dinner Saves Weeknights #shorts
Ingredients
- Ground beef1 lb
- Zucchini2
- Mushroom8 oz
- Carrot · julienned1
- Scallion
- Soy sauce3 tbsp
- Bbq sauce3 tbsp
- Maple syrup2 tbsp
- Garlic2
- Ginger1 tsp
- Sesame oil1 tbsp
Instructions
- Mix all the sauce ingredients in a small bowl or measuring cup and set aside.
- Heat 1 Tbsp oil in a large skillet or wok over medium-high heat. Add the beef and cook, breaking it up with a spatula, for about 5 minutes until fully cooked through and lightly browned. Move the beef to a separate bowl, keeping any fat in the pan.
- In the same pan, add a little oil if needed, then add all the vegetables and stir-fry frequently for 2-3 minutes, until the zucchini is half done and still crunchy. Do not overcook.
- Return the beef to the pan, add the sauce and stir. Cook, stirring occasionally, for about 2 minutes until fragrant. The zucchini should be crisp-tender.
- Season to taste with salt and pepper and remove from the heat. Serve over freshly cooked rice or in lettuce cups, garnished with chives if desired.
