Instructions
- Heat a pan over medium-high heat with a touch of spray oil. Add the beef mince and cook for 5 to 6 minutes, until no longer pink.
- Add the spices and diced tomatoes and mix well. Cook for 2 more minutes, then take off the heat. Move to a bowl, or keep it in the pan.
- Whisk the eggs in a bowl until smooth. Put the pan (or a clean one) over medium-high heat and melt the butter.
- Pour in the eggs and cook for 2 to 3 minutes, until soft curds form. Add the cheese, salt and pepper, stir until melted, then remove from the heat.
- Warm the tortillas slightly. Layer the beef mixture and scrambled eggs on top, add your sauce, and wrap tightly.
- Wrap in foil, food-safe paper, zip-lock bags or meal prep containers.
- To toast, place the burritos on a parchment-lined tray, spray lightly with oil, and bake at 200°C (390°F) for 15 to 16 minutes, or air fry at 200°C (390°F) for 6 to 7 minutes, until golden and hot through.
