Ingredients

Instructions

  1. Dice the choy sum or bok choy finely, keeping the stems and leaves separate. Dice the Jinhua ham finely.
  2. Rinse the rice several times to remove impurities and excess starch, then drain it thoroughly.
  3. Put the rice and water in a saucepan and bring to a boil over high heat, which takes just a few minutes. Stay nearby, as it can boil over.
  4. Once simmering, cover and cook over low heat for 18 minutes.
  5. Heat a wok over high heat. Add the lard and ham and stir-fry for 2 minutes. If using bacon, skip the lard.
  6. Add the minced garlic and the diced stems and stir for a couple of minutes. Add the leaves and stir until they wilt and reduce in volume.
  7. Season with salt and black pepper to taste, adjusting for the saltiness of your ham. Mix thoroughly with the rice.
