This Might Be The Best Dessert I Ever Had
Ingredients
- Graham cracker1 ½ cups
- Sugar2 tbsp + ¾ cups + ½ cups + ¼ cups + 1 ½ tsp
- Brown sugar1 tbsp + 1 cup
- Cinnamon · ground4 ¾ tsp
- Butter12 tbsp
- Cream cheese24 oz
- Sour cream½ cups
- Vanilla1.63 tsp
- Salt¼ tsp
- Egg3
- Flour⅓ cups
- Milk2–3 tsp
- Heavy cream¾ cups
- Cheesecake
- Whipped cream
- Cinnamon sugar
Instructions
- Preheat the oven to 325°F (160°C).
- Mix the graham cracker crumbs, the two sugars and the cinnamon, then stir in the melted butter until every crumb is moist.
- Press the mixture firmly and evenly over the bottom and up the sides of a 9-inch springform pan. Set aside.
- Beat the cream cheese and sugar on medium-low speed until smooth, scraping the bowl well. Mix in the sour cream, vanilla and salt until just combined.
- Add the eggs one at a time, mixing on low speed after each until just combined, and scrape the bowl again.
- For the cinnamon swirl, stir together the flour, sugar, cinnamon and butter until evenly moistened. Measure out ½ cup (lightly packed, 135 g) into a small bowl, add 2-3 Tablespoons of the cheesecake batter and stir until smooth. Transfer to a piping bag fitted with a round tip, or a zip-top bag with a corner snipped off.
- Pour half the plain batter into the crust. Scatter the cinnamon sugar mixture over it in large crumbly pieces. Pour the remaining plain batter on top, then pipe the swirl mixture over the surface.
- Place the pan on a foil-lined baking sheet and bake on the center rack at 325°F (160°C) for 40-50 minutes, until the edges are set and the center still jiggles slightly when jostled.
- Turn off the oven, crack the door several inches and let the cheesecake cool inside for 1 hour. Then cool on the counter until mostly cool, and refrigerate for at least 6 hours, preferably overnight.
- Whisk the powdered sugar, vanilla and milk until the glaze ribbons off the whisk and holds its shape for several seconds. Drizzle it evenly over the cheesecake.
- Beat the heavy cream, sugar and vanilla on low speed, increasing to high, until thick, voluminous and stiff peaks form. Pipe decorative dollops around the outside edge using a closed star tip.
- Whisk the sugar and cinnamon together and sprinkle evenly over the whipped cream.
- Remove the springform ring, slice and serve.
