- Vanilla2 tsp
- Orange · zested4
- Greek yoghurt1 ¼ cups

Instructions
- Preheat the oven to 350°F (180°C). Line two large baking sheets with parchment and grease a 9 x 13-inch (22 x 33 cm) baking dish with nonstick spray.
- Tear the phyllo into uneven pieces, separate the layers and spread them evenly across the baking sheets.
- Bake for about 20 minutes, until lightly toasted and hardened. Set aside to cool.
- Whip the sugar and eggs over medium-high heat until doubled in volume, pale yellow and thick, about 5 minutes.
- Beat in the sunflower oil, baking powder, vanilla, orange zest and Greek yogurt for 1-2 minutes until smooth.
- Crush the toasted phyllo into small pieces and fold it into the egg mixture until well combined.
- Spread the mixture evenly in the prepared dish.
- Bake for about 40 minutes, until the top is golden and the filling is set. Cover with foil if browning too fast.
- Meanwhile, combine the orange juice, water, lemon juice, orange peel and sugar in a saucepan. Bring to a low boil over medium-low heat and cook 10-12 minutes until the sugar dissolves and the syrup slightly thickens.
- Poke the surface of the hot pie all over with a fork.
- Slowly ladle the syrup over the pie and let it soak in.
- Rest for about 1 hour to absorb the syrup, then slice and serve.
