Ingredients
- Vegetable oil5 tbsp
- Ground chicken1 lb
- Carrot1
- Cabbage1 ½ cups
- Garlic3 cloves
- Scallion4 stalks
- Oyster sauce2 tbsp
- Hoisin sauce1 tbsp
- White pepper
- Rice10
- Egg1
Instructions
- Heat half the oil in a pan over high heat. Add the ground chicken and stir-fry until fully cooked, letting it brown slightly. Add the garlic and stir-fry briefly until fragrant.
- In the same pan over high heat, add a little more oil and stir-fry the carrot and cabbage for about 1 minute until slightly softened.
- Return the chicken to the pan. Add scallions, oyster sauce, hoisin sauce and white pepper, mix well, then remove from heat and let the filling cool slightly.
- Whisk the egg in a bowl. Brush a thin, even layer on both sides of each rice paper sheet and let it sit a few seconds until just softened.
- Place a small amount of filling near the bottom of a sheet, roll tightly, and create layers as you wrap. Do not overfill.
- Heat the 3 tablespoons of oil in a pan over medium heat. Place the dumplings in a single layer with space between them. Cook about 2 minutes per side, turning as needed, until golden and crispy. Leave them undisturbed at first.
- Transfer to a wire rack to keep crisp and serve hot with soy sauce, vinegar and chili oil.
