Ingredients
- Puff pastry1
- Basil · flakes2 tsp
- Sun dried tomato2
- Parmesan cheese · finely grated4 tsp
- Cheese2 tbsp
- Apple½
- Honey3 tsp
- Cinnamon
- Ice cream
Instructions
- Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
- Cut the puff pastry into 4 even squares. Spread 1 teaspoon of pesto in the middle of each savoury square, leaving a border.
- On one side of the parchment, arrange 2 teaspoons of grated parmesan in a rectangle, then place a sun-dried tomato piece on top of the cheese.
- On the other side of the parchment, spread 1 teaspoon of honey in a rectangle. Lay half of the apple slices on the honey, overlapping them in a row. Sprinkle with cinnamon and drizzle 1/2 teaspoon of honey over the apple.
- Place a pastry square over each filling. Press the pastry around the filling with your fingers to push out air, then seal all edges with a fork.
- Repeat with the remaining filling on the other side of the tray, leaving space between the pastries.
- Bake for 8 to 10 minutes, until the pastry has risen and is golden and crisp. Flip the pastries over with a spatula.
- Dust the apple pastries with icing sugar. Top the savoury pastries with a heaped spoonful of stracciatella, a drizzle of olive oil, basil leaves and red pepper flakes.
