- Garlic5 cloves
- Jalapeño chili1
- Thai basil1 cup
- Cornstarch
- Scallion · chopped1 handful
- Vegetable oil
- Shaoxing wine3 tbsp
- Soy sauce3 tbsp
- Toasted sesame oil3 tbsp
- Sugar½ tbsp
Instructions
- Mix the sauce ingredients in a bowl until well combined and set aside.
- Pat the tofu dry and cut it into cubes or rectangular slices about 1 cm thick.
- Spread about 1/4 cup cornstarch on a shallow plate. Coat the tofu slices well so every side has a thin layer.
- Preheat the air fryer on its fries setting (390°F).
- Brush the top of the tofu with a thin layer of oil, and grease the air fryer rack.
- Place the tofu slices in a single layer on the rack using tongs or chopsticks.
- Air-fry for about 4-8 minutes, checking and flipping as needed, until golden brown.
- Move the fried tofu to a cooling rack while you cook the next batch.
- Heat a large skillet with 2 tablespoons oil. Fry the ginger slices until their edges are crisp and fragrant.
- Add the garlic and chopped chili and cook until the garlic smells fragrant.
- Pour in the sauce and cook until the sugar dissolves.
- Add the tofu and toss to combine. Add the Thai basil and keep cooking until the sauce reduces.
- For a clay pot version: heat the clay pot with a drizzle of oil, fry the scallions and half the Thai basil until fragrant, add the tofu, top with the rest of the basil, cover and cook over low heat for 1-2 minutes to char the bottom.
- Turn off the heat and serve warm with rice.
