Tin Roof Cookie Cups
Ingredients
- Butter · softened1 cup
- Sugar½ cups
- Flour2 cups
- Chocolate chip½ cups
- Ice cream12
- Chocolate
Instructions
- Preheat the oven to 180°C on fan-assist and grease a 12-hole muffin tray.
- Beat the butter and icing sugar for 3-4 minutes until light and fluffy.
- Sift in the cake flour and mix to a smooth cookie dough. Stir in the chocolate chips until evenly distributed.
- Roll the dough into an even log and cut it into 12 discs. Press one disc into the base of each muffin hole.
- Bake for 15 minutes until golden brown.
- While still warm and soft, press each cookie down with the base of a small glass that is narrower than the cookie, so the edges rise and the centre dips to form a cup. Work quickly, as they harden as they cool.
- Let the cookie cups cool completely in the tray.
- Lift out the cookie cups, place them on a platter, add a generous scoop of ice cream to each, and drizzle with chocolate sauce.
