Ingredients

Instructions

  1. Preheat the oven to 350°F (160°C).
  2. Whisk the flour, salt and sugar in a large bowl. In another bowl, whisk the olive oil, lemon juice, yogurt and egg until smooth. Gradually add the flour to the wet mixture, whisking until thickened, then mix in the rest with your hands without overworking. Cover and rest 5-10 minutes.
  3. Mix the feta, mozzarella, yogurt and beaten egg. Season with black pepper, then mix in the mint and oregano.
  4. Line two baking sheets with parchment. Cut the dough into two equal portions, then divide each into 8 pieces. Roll each into a ball and flatten into a 5-inch circle without adding extra flour.
  5. Place a spoonful of filling in the center of each circle, fold over and press the edges to seal. Crimp the edges with a fork. Arrange 8 pies on each sheet.
  6. Whisk 1 egg yolk with 2 Tbsp water, brush over the pies and sprinkle with sesame seeds if using.
  7. Bake for 20-25 minutes until golden brown, rotating the trays halfway by moving the bottom tray to the top and the top tray to the bottom. Serve warm.
