Tirupati vada recipe | Whole urad dal vada recipe
Ingredients
- Urad dal1 ½ cups
- Cumin1–1 ½ tsp
- Peppercorn1–1 ½ tsp
- Salt½ tsp
- Ghee¼ cups
Instructions
- Soak the whole urad dal in plenty of water for 4 to 5 hours, then drain.
- Finely grind the cumin, peppercorns and salt together to a powder.
- Add the dal and blend without water, then add 2 to 3 tablespoons water and blend to a coarse, thick, sticky paste.
- Grease a foil, banana leaf or clean moist cloth, and dip your fingers in water.
- Divide the dough into 12 equal portions and roll each into a ball.
- Pat each ball into a very thin vada on the cloth using moist hands; keep them thin or they will not cook through.
- Heat the ghee in a kadai or frying pan. Lift each vada onto your greased fingers and slide it into the hot ghee.
- Fry over medium heat, turning once, until golden and crisp on both sides. If a vada puffs up, press it down with a spatula.
- Drain on kitchen paper.
