Instructions
- In a bowl, mix the yogurt, red chili powder, ginger garlic paste, garam masala, coriander powder, chaat masala, kasuri methi, oil, lemon juice and salt. Taste and add salt if needed, depending on how salted the tofu is. If using vegetables, set aside 2 tablespoons of this marinade.
- Add the tofu cubes and gently coat them in the marinade. Cover and refrigerate for at least 4 hours, or overnight.
- Heat the oil in a pan, add cumin seeds, cardamom, cinnamon and onions. Sauté over medium heat for 7 to 8 minutes until golden.
- Add the sliced ginger and garlic and sauté for 2 minutes. Add the tomatoes, salt and nuts, and cook until they break down and turn mushy.
- Stir in the red chili powder and garam masala and cook for 2 minutes until aromatic.
- Let the mixture cool, then blend it with the water (and coconut milk if using) into a smooth puree. Remove the cinnamon from the blended mixture and return it to the pan.
- Return the puree to the pan, bring to a rolling boil, then reduce to medium heat.
- Cook covered, stirring occasionally, until the gravy is thick and traces of oil show on top.
- When thick yet pourable, crumble the kasuri methi between your palms and sprinkle it in. Taste and add salt and a little sugar if needed. Stir in 1 teaspoon ghee or butter and keep warm.
- Optional: dice onions and bell pepper to the same size as the tofu, separate the onion layers, and toss them gently in the reserved marinade.
- Preheat the oven to 240°C (460°F) for at least 15 minutes. Line a deep baking tray with foil.
- Thread the onion, carrots or bell peppers and tofu alternately onto skewers and place them in the tray on the middle rack. Bake 10 minutes, turn, and bake 5 more minutes. Broil for 1 to 2 minutes until charred in spots.
- Serve the tikka with the masala on the side or stir them in just before serving, garnished with coriander and green chilies if desired.
