Ingredients

Instructions

  1. Mix the softened butter and honey in a small bowl. Set a large cooling rack on a large baking sheet, lay the bread on the rack, and spread the honey butter evenly over each slice.
  2. Pipe a wall of mayonnaise around the edge of each bread slice to hold the egg in place.
  3. Crack one egg at a time into the centre of each slice. Season with a pinch of salt and pepper.
  4. Scatter the pancetta bits over everything, then sprinkle on a little parmigiano.
  5. Put the toasts in a cold oven on the middle rack. Close the door, turn on the high broiler (550°F) and cook for 4 to 5 minutes.
  6. Turn off the broiler and let the toasts finish cooking in the residual heat for about 2 to 3 minutes.
  7. Take them out, sprinkle on more parmigiano to taste, and serve immediately.
