Ingredients
- Potato starch7 oz
- Carrot1
- Onion½
- Scallion2
- Beef4 oz
- Shiitake mushroom3–4 oz
- Spinach6 oz
- Oil for stir frying
- Salt
- Egg
- Soy sauce3 ½ tbsp
- Sugar3 tbsp
- Sesame oil2 tbsp
- Garlic · minced2 tsp
- Sesame seed · roasted1 tbsp
- Black pepperto taste
Instructions
- Cut the carrot into matchsticks, thinly slice the onion, cut the scallion white parts into about 2-inch pieces (split lengthwise first if thick), remove mushroom stems and slice into ¼-inch strips, and cut the meat into thin 2-inch strips.
- Mix all the sauce ingredients in a small bowl until the sugar dissolves.
- In a large non-stick pan, boil about 5 cups of water and cook the noodles for 6 to 8 minutes, until completely translucent and soft. Drain, rinse under cold water and drain well. Cut the noodles roughly into 6 to 7 inch lengths and put them in a large bowl. Mix with 3 tablespoons of the sauce.
- In the same pan, boil 2 cups of water and blanch the spinach just until wilted. Drain quickly, shock in cold water, squeeze out the water, chop it a couple of times and lightly season with salt.
- Add ½ tablespoon oil to the pan and stir-fry the noodles over medium to medium-high heat, stirring often, until translucent and slightly sticky, about 4 minutes. Return them to the bowl.
- Add ½ tablespoon oil to the pan and stir-fry the carrot over medium-high heat with a pinch of salt. After about a minute, when half cooked, push to one side, add the onion and stir-fry until translucent with a pinch of salt. Stir in the scallion briefly. Keep the vegetables crisp, then add to the bowl.
- Add the beef and mushrooms with 2 tablespoons of the sauce and cook until the meat is cooked through, 2 to 3 minutes. Add to the bowl.
- Add the spinach and remaining sauce to the bowl and toss well. Taste and adjust with soy sauce and/or sugar, starting with ½ teaspoon, if needed.
- Optional egg garnish: separate the egg. Beat the white lightly and stir the yolk until smooth. In a lightly oiled non-stick pan over medium-low heat, spread each into a thin layer, cook briefly on each side without browning, then roll up and thinly slice.
