Trirangi Khandvi Video Recipe- Tri-color stuffed khandvi Recipe by Bhavna
Ingredients
- Chickpea flour1 cup
- Yoghurt½ cups
- Salt1 pinch + 1 tsp
- Ginger paste2 tsp
- Chili pepper · paste2 tsp
- Turmeric · powder1 pinch
- Oil3 tbsp
- Pea¾ cups
- Cilantro · chopped finely3 tbsp
- Mint2 g
- Garlic2 g + 1 tsp
- Lime3 Drop
- Sugar½ tsp
- Poppy seed2 tbsp
- Coconut1 tbsp
- Cashew1 tbsp
- Mustard seed½ tsp
- Sesame seed1 tsp
Instructions
- Blend the green peas, coriander, mint, green garlic, green chilli paste and ginger paste into a smooth paste. Transfer to a bowl, add lime juice, sugar and salt to taste, mix and set aside.
- Clean the blender, then blend the orange stuffing ingredients (poppy seeds, coconut, cashew nuts) to a paste. Transfer to a bowl, mix in the garlic chutney until orange, and set aside.
- Whisk the gram flour, yogurt, water, salt, ginger and green chilli paste, turmeric and oil with a hand blender until smooth and liquid.
- Pour the batter into a pot over medium-high heat and bring to a boil, stirring vigorously until the raw smell is gone. Cook for 20 minutes, or until a spoonful spread on a plate and left to dry for a minute comes off easily.
- Grease a large steel plate with oil. Pour in a ladleful of batter and spread it as thinly as possible with the back of a large flat spoon, using circular outward movements like a dosa.
- When the sheet has cooled, spread the orange or green stuffing evenly over it. Roll up gently, pressing lightly, then slice into 1-inch pieces and place in a bowl.
- Heat oil in a small pan, add mustard and sesame seeds, and once they stop crackling, pour the seasoning over the rolls.
