- Mashed potato1 ½ cups
- Crumbled cooked stuffing¾ cups
- Cheese¾ cups
- Cheddar cheese · shredded¾ cups
- Vegetable oilas needed for frying
- Leftover gravy · warmed1 cup
- Cranberry sauce½ cups
Instructions
- Cover the egg roll wrappers with a damp paper towel. Fill a small bowl with water and set the turkey, mashed potatoes, stuffing, mac and cheese and cheddar in separate bowls nearby.
- On a towel, place a wrapper with a corner pointing toward you and brush the edges with water. Spread 2 tablespoons mashed potatoes across the center, leaving about 1½ inches free on each side.
- Top with 2-3 tablespoons shredded turkey, 1 tablespoon stuffing, 1 tablespoon mac and cheese and 1 tablespoon cheddar.
- Fold the bottom corner up over the filling and tuck it under. Fold in the left and right corners, then roll up tightly away from you, sealing the top corner. Place seam-side down and cover with a damp towel. Repeat with the remaining wrappers and filling.
- Pour vegetable oil into a large deep pot to a depth of 2-3 inches and heat over medium-high until it reaches 350°F (deep-fry thermometer), 8-10 minutes.
- Fry the egg rolls in batches of 3-4, turning once halfway, until golden brown and crispy on all sides with visible bubbles, 3-4 minutes per batch.
- Lift the rolls out with a slotted spoon onto a paper towel-lined plate or wire rack and let cool 2-3 minutes.
- Arrange on a platter, garnish with fresh herbs if desired, and serve hot with warm gravy and/or cranberry sauce for dipping.
