Turkish Churros
Ingredients
- Butter2 tbsp
- Egg3
- Flour2 ½ cups + 2 tbsp
- Starch2 tbsp
- Sugar3 cups
- Lemon1 tbsp
Instructions
- Melt the unsalted butter in the hot water. Add the flour and stir over medium heat. When the dough is soft and no longer sticky, transfer it to another bowl so it cools quickly.
- Make the syrup: pour the water into a large pot over medium heat and add the sugar. When it starts to boil, add the lemon juice and turn off the heat.
- Transfer the cooled dough to the bowl of a heavy-duty mixer. Add the semolina and starch, then gradually add the eggs and mix until smooth.
- Fill a piping bag with the dough and pipe it into frying oil at room temperature, not hot. Cut the dough with an oiled pair of scissors, not a knife, to keep its shape.
- Fry over low heat until fully browned, then move them directly into the sweet syrup.
- After 2 minutes in the syrup, remove them and transfer to a plate.
