- Salt1 tsp

Instructions
- Process the onion, bell pepper, tomato and garlic in a food processor on high until finely minced into a paste, about 30 seconds.
- Heat the oil in a large nonstick skillet over medium heat. Add the paste and cook, stirring often, for 2–3 minutes until most of the moisture has gone.
- Add the beef, tomato paste, cumin, paprika, salt, cinnamon and black pepper. Stir, then cook for 7–8 minutes, breaking up the meat and stirring now and then, until the beef is fully cooked and the mixture is thick and fragrant. Take off the heat and cool for 5 minutes.
- Meanwhile, heat the oven to 425°F (220°C).
- Roll each pizza dough into a large oval about ¼ inch thick. Sprinkle ¾ cup of the cheese over the outer 1½ inches of each oval, fold the edges over the cheese and press to seal. Pinch and twist both narrow ends to form pointed tips like a canoe.
- Spread the cooled beef evenly over the centre of the two doughs, then sprinkle each with the remaining ½ cup of cheese.
- Move the pides to a parchment-lined baking sheet and brush the exposed crust with the beaten egg.
- Bake for 12–15 minutes, turning the sheet front to back halfway through, until the crust is golden and the cheese is melted and bubbly.
- Cool for 2–3 minutes, garnish with parsley or chili flakes if you like, then slice and serve warm.
