Turkish Rice Pudding (Sütlaç)
Ingredients
- Rice¼ cups
- Milk4 cups
- Sugar½ cups
- Rice flour2 tbsp
- Vanilla2 tsp
- Pistachio
- Cinnamon
Instructions
- Rinse the rice, then drain off the water.
- Cook the rice in water until it softens.
- Once the rice is cooked, add the milk and sugar and stir constantly. Bring to a boil, then simmer on low heat for 20 minutes or more, until the rice is tender.
- Mix the rice flour with a little cold milk. Slowly stir this into the pudding, stirring constantly, and cook for another 5 to 8 minutes.
- Stir in the vanilla essence. Check the consistency: it should be runnier than pudding. Add more milk if it is too thick.
- Pour the pudding into small clay bowls or ramekins.
- Bake at 400°F (200°C) for 10-15 minutes, until the top caramelizes. Check it regularly while it bakes.
- Let the bowls cool to room temperature, then refrigerate until chilled before serving.
