Turkish Simit
Ingredients
- Yeast2 tsp
- Salt1 tsp
- Sugar1 tbsp
- Flour4 cups
- Vegetable oil¼ cups
- Grape¼ cups
- Sesame seed · toasted1 ½ cups
Instructions
- In a stand mixer bowl, mix the sugar, yeast, 4 cups of flour and the salt.
- Add the warm water and vegetable oil, and mix with the dough hook until it comes together and is a little sticky. If it won't come together, add 2 to 3 tablespoons more flour.
- Knead with the dough hook for about 8 minutes until the dough is no longer sticky. Cover and leave to rise for 1.5 hours, until doubled.
- Meanwhile, toast the sesame seeds in a pan, and mix the grape molasses with 1/2 cup water.
- After 1.5 hours, punch the dough down and divide it into 16 pieces. Roll 2 pieces into 25-inch ropes and lay them side by side.
- Twist the two ropes in opposite directions, then join the ends and pinch them to form a ring. Repeat with the remaining 14 pieces to make 7 more rings.
- Dip each ring in the molasses water, then in the sesame seeds, and place on a parchment-lined baking sheet.
- Cover loosely and let rise for another 20 minutes.
- Preheat the oven to 400°F (200°C).
- Bake for 12 to 15 minutes until the simit are brown and fully cooked.
