Turn Leftover Mashed Potatoes into Crispy Mashed Potato Cakes
Ingredients
- Mashed potato2 cups
- Cheddar cheese · shredded¾ cups
- Egg1
- Flour2 tbsp
- Garlic powder¼ tsp
- Onion powder¼ tsp
- Black pepper · ground¼ tsp
- Salt¼ tsp
- Oil2 tbsp
Instructions
- In a large bowl, mix the mashed potatoes, cheese, egg, 2 tablespoons flour, garlic powder, onion powder, pepper and salt until well combined.
- Dust a baking sheet with flour. Scoop out ¼ cup portions and drop them onto the sheet.
- Dust the tops of the mounds generously with flour and flatten each to about ¾ inch (2 cm). If the mixture is too soft to hold its shape, add more flour.
- Heat the oil in a large frying pan over medium-high heat until it shimmers. It should coat the whole bottom of the pan.
- Fry the cakes in batches, spaced about 2 inches (5 cm) apart, until golden brown on one side. Flip and cook until golden on the other side and heated through to at least 165°F.
- Transfer to a wire rack or a paper towel-lined plate and serve warm.
