Ingredients

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Blend all the ingredients in a food processor or high-powered blender until mostly smooth and sticky like cookie dough; a few rice grains or cheese bits are fine.
  3. If the dough is too wet, spread it on a tray to dry or chill it briefly in the refrigerator. If it is still too sticky, dust it with extra arrowroot or starch on a floured surface.
  4. Wrap the dough between two sheets of parchment and flatten it with a rolling pin or smooth can to about 1/8 inch (nickel thickness).
  5. Remove the top parchment, then cut the dough into squares with a pizza cutter or knife.
  6. Optionally sprinkle toppings such as flaky sea salt, sesame seeds or chili powder over the squares.
  7. Place on a baking sheet and bake for 15–20 minutes, flipping the pan halfway through, until evenly browned.
  8. Let the crackers cool on the baking sheet until they harden, then break them apart. Store in an airtight container at room temperature for up to 5–7 days.
